File this under the “Better Late than never” catagory of newsletter themes. I meant to get this out on Sunday, but I was very pre-occuplied by my visit from Paul Lebeau from the Mockmill Company. He presented me with my own MockMill 100 home grain processer. I knew that Paul was visiting, but I was not aware that he would be gifting me a free Mockmill. I was beyond stunned. I’ve always wanted one of these and was hoping to get one in the next year. This was just one of those moments where your jaw drops!
I really loved getting to talk to Paul and find out more about the Mockmill company. Paul was a wonderful conversationalist and my whole family loved getting to talk to him. He was able to not only show me how to operate the mill (easy to use and clean!) but also gave us some insight on how whole grains effect digestion and health. Paul brought some Golden Millet which we used initially, then switched up to Red Wheat, White Wheat, and Barley.
So often, I have had to mail order flours made with various grains because I did not have the ability to get them in the store. With the rise of home baking, not only are some flours expensive and hard to find, but there is also a scarcity problem with available flours just being sold out on most grocery visits. Having this mill will be wonderful for making rice flours, buckwheat flour, and other types of flours to use in Sourdough, Scones, Biscuits, cookies and more.
Paul is a wonderful storyteller and just all-around fun person to talk to! His is a font of information on Grain Milling and nutrition! I know that he spends a lot of his time travelling all over the world for the Mockmill company and his friends are in the thousands!
We were sad to see Paul go, but I know I will be having him over again for dinner soon! I also hope to visit him in Germany one day! I cannot wait to have a chance to use this mill over the weekend and grind some grain for bread. I’m going to be gringing some Red Winter Wheat for a Wheat and Sourdough loaf with Guiness Stout and Molasses.

Dianne is the author of a multiple award-winning book on food writing, Will Write for Food: Pursue Your Passion and Bring Home the Dough Writing Recipes, Cookbooks, Blogs and More. She co-authored two cookbooks with chef Craig Priebe and has judged cookbooks for the James Beard Foundation and the International Association of Culinary Professionals.
